Meatloaf Au Poivre

Ingredients

  • 1 slice Sourdough bread diced
  • 2 tbsp Milk
  • 8 oz Ground beef
  • 1/2 tbsp Steak seasoning montreal steak seasoning or comparable brand
  • 2 slices Crusty bread lightly toasted
  • 1 tbsp Fresh parsley

Au Poivre

  • 1 tsp Extra-virgin olive oil
  • 1/2 cup Mushrooms sliced
  • 1 clove Garlic minced
  • 1 tbsp Shallot minced
  • 2 tsp Black peppercorns crushed
  • 1/2 tsp Worcestershire sauce use more to taste as needed
  • 1 tsp Dijon mustard
  • 1/4 cup Beef broth
  • 1/2 tbsp Butter
  • 1 tbsp Heavy cream

Instructions

  • Preheat the oven to 400 degrees.
  • Soak the bread in the milk for 2 to 3 minutes. Add in the beef and seasoning, mix well with your hands. Place the mixture onto a foil lined baking sheet and form into an even loaf (or use a loaf pan).
  • Cook in the oven to an internal temperature of 150 degrees using a thermometer. Then set aside to rest for 5 to 10 minutes before slicing.
  • For the sauce: Heat the oil on medium heat in a non-stick pan. Sauté the mushrooms, garlic and shallot until soft. Stir in the peppercorns, Worcestershire sauce, Dijon mustard, and broth. Bring to a simmer, then add butter and cream. Simmer until the sauce reduces and thickens (consistency should coat the back of a spoon).
  • Spoon the sauce over the meatloaf, serve with crusty bread. Garnish with parsley.
