Ingredients

Ginger Lemongrass Iced Tea

  • 24 oz Water
  • 4 bags Lemongrass ginger tea
  • Sugar to taste
  • Ice cubes

Maine Lobster Rolls

  • 8 oz Cooked lobster meat chopped
  • 1/3 cup Celery chopped small
  • 2 TBSP Mayonnaise
  • 1 tsp Lemon juice
  • 1 TBSP Fresh chives chopped
  • 1 TBSP Fresh dill chopped
  • Salt to taste
  • Black pepper to taste
  • 4 Hot dog buns
  • 2 TBSP Butter

Cheese & Crackers

  • 2 oz Your choice of cheese sliced
  • 4 oz Crackers

Instructions

  • Prepare ingredients: Prepare and measure all ingredients as listed.
  • Make iced tea: Bring the water to a simmer over medium heat, then turn off the heat and add the ginger lemongrass tea bags. Steep for 10 minutes, stir in sugar to taste, then refrigerate until chilled. Serve over ice.
  • Mix lobster filling: In a bowl, combine chopped lobster meat, celery, mayonnaise, lemon juice, chives, dill, salt, and black pepper. Mix gently until evenly coated.
  • Toast buns: Preheat a skillet or griddle over medium heat and melt butter. Place the hot dog buns in the skillet and toast until golden brown on both sides, about 2 minutes per side.
  • Assemble rolls: Divide the lobster mixture evenly among the toasted buns, filling them generously.
  • Serve the lobster rolls with cheese and crackers and ginger lemongrass iced tea.
