Prep the ingredients per the instructions above.
Start the farro: Rinse the farro under cold water. Cook according to the directions on the package. Once tender, season with salt and pepper. Stir in the olive oil, lemon zest, lemon juice, parsley, and thyme.
Steam the broccolini: Bring a pot of water to a boil. Cook the broccolini until bright green and tender. Season with salt and pepper.
Cook the salmon: Pat the salmon fillets dry and season both sides with salt, pepper, and italian seasoning. Heat olive oil in a skillet over medium-high heat. Place the salmon skin-side down and cook for 4–5 minutes until crisp. Flip over and cook to an internal temperature of 140°F / 60°C. Add a squeeze of lemon optional.
Prepare the mint tea: Bring water to a boil. Remove from heat and add mint tea bags. Steep for 5–7 minutes.
Serve the salmon with lemon herb farro, steamed broccolini, mint tea and dates.
