Lemon Herb Couscous

Ingredients

  • 1/2 cup Israeli couscous
  • 1 cup Chicken broth
  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Fresh thyme chopped
  • 2 tbsp Fresh chives chopped

Instructions

  • Rinse couscous under cold water until water runs clear.
  • In a saucepan over medium heat, bring the broth to a boil. Cook the couscous according to the direction on the package. Drain any excess broth if needed.
  • Add oil, lemon juice, thyme, and chives. Season with salt and pepper to taste.
