Leftover Christmas Feast

Ingredients

Apple Salad

  • 2 cups Spring mix
  • 1/2 Apple thinly sliced
  • 2 TBSP Crumbled blue cheese
  • 2 TBSP Dried cranberries
  • Leftover candied pecans
  • Leftover vinaigrette

Chistmosas

  • 1/2 Granny Smith apple chopped
  • 1/4 cup Fresh cranberries
  • 1/4 cup Grapes halved
  • 1/4 cup Pomegranate seeds
  • 1/4 cup White Grape Juice
  • 8 oz Champagne

Leftovers

  • 2 Dinner rolls
  • Leftover Christmas Feast

Instructions

  • Preheat the oven to 350 °F (176 °C).
  • Prep the ingredients per the instructions above.
  • Assemble salad: In a large bowl, combine greens, apples, candied pecans (leftover), blue cheese, and dried cranberries.
  • Make the christmosa: In a pitcher, combine apples, cranberries, grapes, and pomegranate seeds. Pour over grape juice and Champagne and stir well. Serve over ice if desired.
  • Warm the dinner roll in the oven for 2 to 3 minutes. Dress the salad.
  • Plate the leftovers; reheat in a microwave until hot.
  • Serve leftovers with salad, roll, cookie, and christmosa.
