Korean BBQ Chicken

Ingredients

Marinade

  • 6 tbsp Reduced-sodium soy sauce
  • 3 tbsp BBQ sauce
  • 4 tbsp Honey
  • 2 tbsp Rice wine vinegar
  • 2 tbsp Garlic minced
  • 2 tbsp Sesame oil
  • 2 tsp Sesame seeds

Chicken

  • 1 pound Chicken breast boneless skinless sliced into 1/2 inch thick medallions
  • 1/2 Onion thinly sliced
  • 3 Scallions cut into 2-inch pieces

Instructions

  • Mix all the marinade ingredients in a bowl.
  • Place the chicken, onion, and scallions into the bowl and toss gently to combine with the marinade. Marinate the chicken for 20 minutes. Do not discard the marinade.
  • If using a grill: Grill the sliced chicken over high heat until the outside is nicely caramelized and the internal temperature reaches 160 degrees using a thermometer, about 2 minutes per side. Once cooked remove the chicken from the heat and set aside on a plate to rest for 3 minutes.
  • If pan searing: preheat a skillet or nonstick pan nice and hot on medium high heat and cook the chicken on both sides until nicely caramelized and the internal temperature reaches 160 degrees using a thermometer, about 2 - 3 minutes per side. Do not overcrowd the skillet or pan, work in batches if needed. Once cooked remove the chicken from the heat and set aside on a plate to rest for 3 minutes.
  • Place the marinade in a saute pan on medium heat and bring to a simmer until it thickens into a smooth thick sauce. Brush the sauce over the chicken before serving.
