Jerk Chicken Lettuce Wraps

Ingredients

  • 3 tbsp Extra-virgin olive oil
  • 1/2 cup Red bell pepper chopped
  • 3 cloves Garlic minced
  • 3/4 lb Chicken breast boneless skinless sliced thin
  • 1 tsp Jerk Seasoning
  • 1/4 cup Chicken broth
  • 1 tbsp Lime juice
  • 8 leaves Bibb lettuce
  • 4 tsp Hot sauce (Mild) optional
  • 2 tbsp Scallions chopped

Instructions

  • Heat a non-stick pan over medium heat. Once hot, add the oil. Saute the peppers until soft, then add the garlic and saute until golden brown. Next add in the chicken and jerk seasoning. Cook until the chicken is nicely brown. Season with salt and pepper to taste.
  • Add in the broth and lime juice. Simmer until the flavors blend and the chicken is no longer pink in the middle. Remove from the heat and adjust the seasoning as needed.
  • Place the chicken onto the lettuce. Drizzle with hot sauce if desired. Garnish with scallions.
