Prep all ingredients as instructed above. Leave the Brie out at room temperature to soften.
In a small bowl, mix the butter, chives, parsley, Dijon mustard, and grated garlic until smooth. Season with salt and black pepper.
In a separate bowl, toss the arugula with lemon juice and season lightly with salt and black pepper.
Slice the whole wheat rolls lengthwise. Spread the herb butter on the inside of each roll.
Layer the rolls with deli ham, brie cheese, and the dressed arugula.
In a pitcher or large glass, combine the sparkling water, lemon slices, and chia seeds. Stir well, let sit briefly, then stir again to prevent clumping.
Arrange the carrot sticks with hummus and place the sliced pear alongside.
Serve the jambon beurre with the carrots and hummus, sliced pear, and lemon chia sparkling water.
