Italian Panini

Ingredients

  • 4 slices Sourdough bread
  • 4 slices Provolone cheese
  • 1/2 cup Red onion very thinly sliced
  • 1/2 cup Roasted red peppers
  • 2 cups Arugula
  • 3 oz Calabrese Salami sliced
  • 3 oz Deli ham sliced
  • Nonstick spray
  • 1 TBSP Extra-virgin olive oil
  • 1 Pear sliced

Lemon Spritzer

  • 24 oz Sparkling water
  • 6 slices Lemon

Instructions

  • Preheat a panini grill or alternatively use a grill pan.
  • Layer the bread with provolone, onion, peppers, arugula, salami, and ham. Top with the remaining slice of bread.
  • Grease the panini grill or grill pan with nonstick spray.
  • Cook for 6 to 8 minutes, until both sides have toasted nicely and the cheese has begun to melt.
  • Mix together the sparkling water and lemon slices.
  • Cut the sandwiches in half; serve with sliced pears, and lemon spritzer (serve over ice if desired).
