Hot Roast Beef Sandwich

Ingredients

Sandwich

  • 1 TBSP Extra-virgin olive oil
  • ½ cup Onion thinly sliced
  • ½ cup Mushrooms sliced
  • 6 oz Deli roast beef
  • 2 slices Provolone cheese
  • 2 TBSP Herb mayo (Store-bought or Homemade)
  • 2 Brioche Buns

Carrots and Ranch

  • ½ cup Carrots peeled and cut into sticks (or use baby carrots)
  • ¼ cup Ranch dressing

Lemon Sparkling Water

  • 24 oz Sparkling water
  • 1 Lemon sliced
  • Ice Cubes

Instructions

  • Preheat the oven broiler.
  • Heat olive oil in a pan over medium heat. Saute the sliced onion and mushrooms until golden brown. Then set aside.
  • Add the roast beef to the pan and saute until nicely browned. Top with cheese and place under the broiler to melt.
  • Toast the brioche buns in a toaster until golden brown.
  • Spread herb mayo inside each toasted brioche bun.
  • Place the roast beef on the bun and top with sautéed onions and mushrooms. Top with the other half of the brioche bun.
  • Add the lemon to the sparkling water.
  • Enjoy roast beef sandwiches with carrots and ranch and lemon sparkling water.
