In a bowl, whisk together the garlic powder, onion powder, cayenne pepper, salt, black pepper, honey, and mustard to create the hot honey mustard sauce. Marinade the chicken with half of the sauce and reserve the remaining half for serving.
Preheat the air fryer or oven to 400°F (204°C).
Place the chicken in the air fryer basket (or on a baking sheet). Cook at 400°F (204°C) for 12–15 minutes, or until golden and the chicken reaches an internal temperature of 165°F (74°C). Slice the cooked chicken.
Toast the sub rolls.
Layer the rolls with chicken, drizzle with the reserved hot honey mustard, and top with pickle slices if desired. Close with the top halves and gently press down. Cut each sandwich in half for serving.
In a blender, combine mango, yogurt, milk, cardamom, and sugar. Blend until smooth and creamy. Taste and adjust sweetness as desired.
Serve the sandwiches with carrots, hummus, and mango lassi.
