Honey Sriracha Chicken

Ingredients

  • 1/4 cup honey
  • 1.5 tbsp Sriracha sauce
  • 3 cloves garlic minced
  • 1 tbsp Rice wine vinegar
  • 1 tbsp Reduced-sodium soy sauce
  • 3/4 tbsp Lime juice
  • 1 lb chicken breasts or chicken thighs 4 oz per portion
  • 1 tbsp Extra-virgin olive oil
  • 1 tbsp Scallions sliced
  • 4 Lime wedges

Instructions

  • In a bowl, mix the honey, Sriracha, garlic, rice wine vinegar, soy sauce and lime juice together until well combined. Remove 1/2 of the marinade out of the bowl and reserve on the side.
  • Coat the chicken with the marinade.
  • Heat 2 teaspoons of oil in a nonstick pan or cast iron skillet over medium heat. Cook the chicken for 4 - 5 minutes on both sides, until the chicken is cooked through and no longer pink in the middle; use a thermometer to make sure an internal temperature of 160 degrees is reached. Spoon the marinade that was set aside over the top and serve. Garnish with scallions and a lime wedge.
