Squeeze as much moisture out of the shredded potato as you can with your hands.
In a bowl, mix the shredded potato, flour, garlic powder, and season well with salt and pepper.
Using a food ring or any cylinder type apparatus about 1/2 inch in diameter stuff the potato mixture into the mold tightly. Then pop out the tater tot onto a plastic wrap lined plate or baking sheet.
Repeat the process until all the potato mixture is used. Freeze for about 30 minutes or longer if needed for the tots to hold their shape. They don't need to be frozen through just enough to not break apart when frying.
Heat the oil in a saucepan over medium heat to 350 degrees. Once hot, fry the tots in batches until crispy and nicely golden brown. Set aside on paper towels to drain any excess grease. Season with salt immediately. Be careful not to overcrowd the pan when frying. Be gentle so they do not break apart.
