Home Fry Flatbread

Ingredients

  • 1 medium Potatoes peeled and sliced about 1/2 inch thick (or use whatever potatoes you have)
  • 2 tbsp Extra-virgin olive oil
  • 2 tbsp Onion diced small
  • 1/4 cup White Cheddar shredded
  • 2 medium Naan bread small or medium depending on size, adequate for a portion
  • 4 Eggs
  • 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
  • 1 tsp Scallions chopped

Instructions

  • Bring a pot of salted water to a boil. Add the potatoes, simmer until tender. A fork easily slides in and out. Then drain well.
  • Heat a non-stick pan on medium to medium low heat. Once hot, add half of the oil, along with the onion. Sauté until soft then add in the potatoes and season with salt and pepper. Continue to saute until you get a nice golden brown color on the potatoes.
  • Preheat the oven broiler on low. Spread the cheese over top of the naan. Broil until melted.
  • Heat a non-stick pan on medium heat. Once hot, add the remaining oil. Crack the eggs on a flat surface and into the pan. Cook until the whites of the eggs start to set and become firm. Add a tablespoon or two of water and cover with a lid to finish firming up the whites the eggs while keeping the yolks soft, about 1 to 2 minutes. Season with salt and pepper.
  • Spoon the home fries over the naan and top with eggs. Serve with apple. Garnish with scallions.
