Home Fries Sausage Breakfast Wrap

Ingredients

Home Fries

  • 1 cup Potatoes peeled and diced small
  • 2 TBSP Extra-virgin olive oil
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic powder

Seasoning

  • Kosher salt
  • Black pepper

Eggs

  • 2 tsp Extra-virgin olive oil
  • 4 oz Breakfast sausage links chopped
  • 1 TBSP Butter
  • 4 Eggs beaten
  • 1/2 cup Cheddar cheese shredded
  • 2 Tortilla wraps

Apple Juice

  • 16 oz Apple juice cold

Instructions

  • Prep the ingredients per the instructions above.
  • Place the potatoes into a saucepan and cover with water. Place over high heat. Bring to a boil and cook until tender. Then drain well.
  • Cook the home fries: Heat the oil in a heavy-bottomed skillet. Saute the potato, seasoned with paprika, garlic powder, salt, and pepper, until golden brown. Adjust the salt to taste as needed.
  • Heat the oil in a nonstick pan over medium heat. Saute the sausage until nicely browned. Add the butter and eggs. Move the eggs around the pan until fluffed up and cooked through. Mix in the cheese. Season with salt and pepper to taste.
  • Portion the eggs and home fries onto the wrap. Fold in the ends and roll up tight.
  • Cut in half and serve with apple juice.
