Heat half of the oil in a non-stick pan over low-medium heat. Add in the potatoes and sauté for 6-8 minutes or until you get a nice golden brown color on all sides. Add the onion and peppers, sauté for a further 2-4 minutes. Add in the chicken sausage and brown. Check to make sure the potatoes are tender. Season with salt and pepper.
Once the potatoes are almost done cooking. Heat the remaining oil in a non-stick pan. Crack the eggs on a flat surface and into the pan. Cook until the whites of the eggs start to set and become firm (about 3-5 minutes). Gently flip the eggs over and cook for an additional 1 minute. Season with salt and pepper.
