Home Fries and Eggs

Ingredients

  • 4 tbsp Extra-virgin olive oil
  • 2 cups Potatoes peeled and diced small
  • 1 tsp Paprika
  • 1/4 cup Onion diced small
  • 1/2 cup Green bell pepper seeded and diced
  • 6 oz Chicken sausage links diced
  • 1 cup Cheddar cheese shredded
  • 8 Eggs
  • 4 slices Sourdough bread toasted and buttered if desired (or bread of your choice)
  • 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Heat half of the oil in a non-stick pan over low-medium heat. Add in the potatoes and paprika; season with salt and sauté for 6-8 minutes or until you get a nice golden brown color on all sides. Add the onion and peppers, then sauté for a further 2-4 minutes. Add in the chicken sausage and brown. Check to make sure the potatoes are tender. Season with salt and pepper. Add in the cheese and toss until melted.
  • Heat the remaining oil in a non-stick pan. Crack the eggs on a flat surface and into the pan. Cook until the whites of the eggs start to set and become firm (about 3 minutes). Gently flip the eggs over and cook for an additional 1 minute. Season with salt and pepper.
  • Toast the bread.
  • Serve the home fries with eggs, toast, and apples.
