Instructions
In a nonstick pan on medium low heat cook the ham on both sides until it is golden brown.
Lightly toast the bread.
Heat the oil in a nonstick pan on medium heat. Crack the eggs into the pan, season with salt and pepper. Cook until top is nearly set but still glossy, then flip the eggs over, season with salt and pepper and add the sliced cheese and melt.
Place the tomato season with salt and pepper on the bread, followed by spring mix, eggs, and ham; cut in half and serve with apple slices .
