Heat oil in a nonstick pan over medium heat. Add in the potatoes and flatten them out in the pan. Mix in the onion, pepper, and chicken sausage; season with salt and pepper. Cook until the bottom is golden brown, about 6 - 8 minutes. Using a spatula gently flip the potatoes over.
With the back of a spoon, make evenly spaced pockets in the potato mixture. Sprinkle the cheese over top and crack an egg into each pocket.
Transfer the pan to the oven underneath the oven broiler, cook about 4 - 6 minutes until the whites of the eggs are firm and divide into portions.
Toast the bread. Serve with oranges sections, garnish with parsley.
