Ham Home Fries Breakfast Wrap

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 Potatoes peeled and diced small
  • 6 oz Deli ham chopped
  • 8 Eggs scrambled
  • 4 oz Cheddar cheese shredded
  • 4 Whole wheat tortilla
  • 1/4 Pineapple peeled, cored, and cut into chunks

Instructions

  • Heat the oil in a nonstick pan over medium heat. Add in the potatoes and season with salt and pepper. Cook until golden brown and tender. Add in the ham and saute the ham for 1 - 2 minutes.
  • Add the eggs to the pan, stirring them around with a spatula until they are cooked and no longer runny. Mix in the cheese and season the eggs with salt and pepper.
  • Place the eggs on the wrap. Fold in the ends and roll tightly. Cut in half and serve with pineapple.
