Heat the oil in a nonstick pan over medium heat. Add in the potatoes and season with salt and pepper. Cook until golden brown and tender. Add in the ham and saute the ham for 1 - 2 minutes.
Add the eggs to the pan, stirring them around with a spatula until they are cooked and no longer runny. Mix in the cheese and season the eggs with salt and pepper.
Place the eggs on the wrap. Fold in the ends and roll tightly. Cut in half and serve with pineapple.
