Cook the ham: In a skillet over medium heat, melt butter. Add ham slices and cook until browned on both sides. Remove from the pan and set aside.
Fry the eggs: In the same skillet, add more butter if needed. Crack the eggs into the skillet and cook to your preferred doneness (sunny-side up, over-easy, or scrambled). Season with salt and black pepper. When almost done, place a slice of cheddar cheese on each egg to melt.
Toast sourdough: While the eggs cook, toast the sourdough slices until golden and crispy, either in a toaster or skillet.
Assemble sandwiches: Spread dijon and mayo evenly on the bottom halves of the toasted sourdough. Layer fried ham, eggs with melted cheddar, then top with the other halves of the sourdough. Cut sandwiches in half.
Serve the sandwiches alongside fruit and orange juice. Enjoy!
