Lightly toast the bread slices. Spread the mustard and mayo on all slices of bread.
To build the sandwich, lay down one slice of bread and top with spring mix and tomato seasoned with salt and pepper, another slice of bread topped with ham, and finally a top slice of bread.
Cut diagonally from corner to corner to create 4 triangle pieces. Place the toothpicks in to hold each one together. Serve 2 pieces of sandwich per portion or full sandwich if desired. Serve with pickles and chips.
