Ham & Cheese Roll Up

Ingredients

  • 2 sheets Puff pastry thawed
  • Baby spinach
  • 4 oz Gruyere cheese shredded
  • 12 oz Deli ham
  • 1 tsp Extra-virgin olive oil
  • 3 tbsp Mayonnaise
  • 1 tbsp Dijon mustard or more if desired

Instructions

  • Preheat oven to 375°F (220°C).
  • Using a rolling pin, thin out the puff pastry sheets (sprinkle a little flour if needed to prevent from sticking).
  • Evenly spread out a layer of spinach, cheese, and ham.
  • Roll the puff pastry over. Tuck in the ends to make a seal. Place it on a parchment paper-lined baking sheet. Brush the oil on top.
  • In a bowl, mix the mayo and mustard. Season with salt and pepper to taste.
  • Bake for about 20-25 minutes until the puff pastry is golden brown.
  • Once done, remove from the oven and set aside for 3-5 minutes. Slice into about 1-inch thick portions and serve with Dijon mayo on the side.
