Instructions
Preheat oven to 375°F (220°C).
Using a rolling pin, thin out the puff pastry sheets (sprinkle a little flour if needed to prevent from sticking).
Evenly spread out a layer of spinach, cheese, and ham.
Roll the puff pastry over. Tuck in the ends to make a seal. Place it on a parchment paper-lined baking sheet. Brush the oil on top.
In a bowl, mix the mayo and mustard. Season with salt and pepper to taste.
Bake for about 20-25 minutes until the puff pastry is golden brown.
Once done, remove from the oven and set aside for 3-5 minutes. Slice into about 1-inch thick portions and serve with Dijon mayo on the side.
