Ham Breakfast Wrap

  • Heat a non-stick pan over medium heat. Once hot, add the oil and ham. Sauté until nicely browned. Add in the eggs, scallions, and cheese. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from overcooking or drying out). Remove the pan from the heat while the eggs are still moist.  Season with salt and pepper to taste. 
  • Place the eggs on the wrap. Fold in the ends and roll tightly.
  • In a pan over medium heat, place the wrap seam side down until golden brown, then flip over and do the same on the other side. About 30 seconds to 1 minute on each side.
  • Cut in half and serve with apple.
