(Optional) Toast the slices of sourdough bread to your desired level of crispness.
Spread mayonnaise and mustard on one side of each slice of bread.
Layer two slices of bread with romaine lettuce, tomato slices, deli ham, and Swiss cheese.
Top each sandwich with the remaining slices of bread, mayonnaise side down. Press gently, then cut each sandwich in half.
To prepare the chia fresca, squeeze fresh lemon juice and set it aside. Measure out the maple syrup or honey, and chia seeds. In a medium pitcher, combine the lemon juice with the maple syrup or honey. Stir until fully dissolved. Add the chia seeds and salt. Slowly pour in the water while stirring continuously to prevent clumping. Let the chia fresca sit for 5 minutes to allow the chia seeds to expand, then stir again. Pour into glasses and garnish each with a sprig of fresh mint.
Serve the sandwiches alongside potato chips, pickle spears, and chia fresca.
