Make the tea: Bring the water to a simmer, then remove from the heat. Steep the tea bags (or loose tea) for 10 minutes. Sweeten with honey to taste. Refrigerate to cool, then serve over ice.
Prepare all ingredients as listed above.
Optional: Toast the slices of sourdough bread to your liking.
Spread mayonnaise on one side of each slice of bread.
Layer with romaine lettuce, tomato slices, deli ham, and Swiss cheese.
Top with the remaining slices of bread, mayonnaise side down. Press gently, then cut each sandwich in half.
Serve the sandwiches with carrots, hummus, pickle spears, and hibiscus iced tea.
