Make the tea: Bring the water to a simmer (about 190°F / 88°C), then remove from the heat. Steep the tea bags (or loose tea) in the water for 10 minutes. Sweeten with honey to taste. Refrigerate to cool. Serve over ice.
Prepare all ingredients per the instructions above.
Optional: Toast the slices of sourdough bread to your liking.
Spread mayonnaise and mustard on one side of each slice of bread.
Layer with lettuce, tomato slices, deli ham, and Swiss cheese.
Top each sandwich with the remaining slices of bread, mayonnaise side down. Press gently, then cut each sandwich in half.
Serve the sandwiches with carrots, hummus, pickle, and hibiscus iced tea.
