Grilled Shrimp & Mango Salsa

Ingredients

  • 1 lb Shrimp peeled and deveined
  • 4 tbsp Lemon juice
  • 2 tbsp Old Bay Seasoning
  • 2 tbsp Extra-virgin olive oil

Mango Salsa

  • 1/2 cup Mango peeled and diced
  • 1 Avocado pitted and diced
  • 2 tbsp Red onion finely chopped
  • 2 tbsp Fresh cilantro chopped
  • 1/4 Jalapeño pepper seeds and ribs removed finely chopped
  • 2 tbsp Lime juice
  • 1 tsp Honey

Instructions

  • In a bowl toss the shrimp with lemon juice, old bay, and olive oil. Season well with salt and pepper and set aside.
  • In another bowl, combine the mango, avocado, onion, cilantro, and jalapeño. Stir in the lime juice, honey, and season with salt and pepper to taste. Set aside.
  • Preheat a grill or grill pan on medium heat.
  • Cook the shrimp for 2 - 3 minutes on each side or until an internal temperature of 120 degrees using a thermometer is reached.
  • Serve with mango salsa.
