Grilled Ham Toast

Ingredients

  • 4 Slices Sourdough bread toasted (or bread of your preference)
  • 4 tbsp Mayonnaise
  • 2 cloves Garlic grated
  • 4 tsp Extra-virgin olive oil
  • 6 oz Deli ham
  • 8 Eggs
  • ½ tsp Red pepper flakes (Optional)
  • 1 tbsp Fresh chives chopped
  • 1 cup Blueberries (Check the Fruit guide to substitute seasonal fruits)

Instructions

  • Toast the bread. Mix together the mayo and garlic, then spread it onto the bread slices.
  • Heat a nonstick pan on medium heat. Once hot, add half of the oil. Then brown the ham slices on both sides and place on the bread.
  • Add the remaining oil to the pan. Crack in the eggs, being careful not to break the yolks. Cover with a lid and cook until the whites of the eggs are firm. (Add 1 to 2 tablespoons of water to the pan to help firm up the egg whites).
  • Serve the eggs over the ham, season with salt and pepper. Garnish with red pepper flakes and chives. Serve with blueberries.
