Toast the bread. Mix together the mayo and garlic, then spread it onto the bread slices.
Heat a nonstick pan on medium heat. Once hot, add half of the oil. Then brown the ham slices on both sides and place on the bread.
Add the remaining oil to the pan. Crack in the eggs, being careful not to break the yolks. Cover with a lid and cook until the whites of the eggs are firm. (Add 1 to 2 tablespoons of water to the pan to help firm up the egg whites).
Serve the eggs over the ham, season with salt and pepper. Garnish with red pepper flakes and chives. Serve with blueberries.
