  • 6 slices Eggplant cut about 1/2 inch thick rounds
  • Nonstick spray

Instructions

  • Preheat a grill or grill pan on medium heat.
  • Spray the eggplant on both sides with nonstick spray and season with salt and pepper.
  • Grill the eggplant on both sides until it starts to soften. Remove from heat.
  • Season with salt to taste before serving.
