Grilled Chicken Tacos

Ingredients

  • 4 tbsp Extra-virgin olive oil
  • 3/4 pound Ground chicken
  • 1 packet Taco seasoning
  • 4 oz Mexican cheese blend Shredded
  • 8 Soft taco shells
  • 4 tsp Sour cream
  • 1 tbsp Fresh cilantro garnish

Instructions

  • Heat a teaspoon of oil in a non-stick pan over medium heat, cook the ground chicken with the taco seasoning, and season with salt and pepper, breaking it up into smaller pieces until no longer pink. Add a 1/2-1 cup of water. Bring to a low simmer for 3-5 minutes. Taste and adjust the seasoning as needed.
  • Using a slotted spoon remove the chicken from the pan into a bowl and mix with cheese, leaving all as much of the liquid in the pan as possible. Dip the taco shells into the remaining liquid to coat on both sides.
  • Spoon the chicken into the taco shells and fold.
  • Heat the remaining oil, as needed, in a non-stick pan on medium heat. Cook the tacos on both sides until browned.
  • Serve with sour cream and garnish with cilantro.
