Heat a teaspoon of oil in a non-stick pan over medium heat, cook the ground chicken with the taco seasoning, and season with salt and pepper, breaking it up into smaller pieces until no longer pink. Add a 1/2-1 cup of water. Bring to a low simmer for 3-5 minutes. Taste and adjust the seasoning as needed.
Using a slotted spoon remove the chicken from the pan into a bowl and mix with cheese, leaving all as much of the liquid in the pan as possible. Dip the taco shells into the remaining liquid to coat on both sides.
Spoon the chicken into the taco shells and fold.
Heat the remaining oil, as needed, in a non-stick pan on medium heat. Cook the tacos on both sides until browned.
