Grilled Chicken Tacos

Ingredients

  • 4 tbsp Lime juice
  • 2 tsp Sugar
  • 1 cup Green cabbage shredded
  • 1/2 cup Red cabbage shredded
  • 1 lb Chicken breast boneless skinless
  • 3 tbsp Chipotle Sauce
  • 4 tbsp Orange juice
  • 2 tsp Honey
  • 8 Taco shells (soft or hard)
  • 4 oz Mexican cheese blend
  • 2 tbsp Fresh cilantro whole leaves

Instructions

  • In a bowl combine the lime juice, sugar, and both cabbages. Set aside.
  • Preheat a grill or grill pan on medium heat. Season both sides of the chicken with salt and pepper.
  • Cook the chicken for 4 - 5 minutes per side or until it reaches an internal temperature of 160 degrees using a thermometer. Set the chicken aside to rest.
  • In another bowl whisk together the chipotle sauce, orange juice, and honey.
  • Slice the chicken and place inside the taco shells. Top with cheese, cabbage mixture, and drizzle the chipotle sauce over top. Garnish with cilantro leaves.
