In a bowl combine the lime juice, sugar, and both cabbages. Set aside.
Preheat a grill or grill pan on medium heat. Season both sides of the chicken with salt and pepper.
Cook the chicken for 4 - 5 minutes per side or until it reaches an internal temperature of 160 degrees using a thermometer. Set the chicken aside to rest.
In another bowl whisk together the chipotle sauce, orange juice, and honey.
Slice the chicken and place inside the taco shells. Top with cheese, cabbage mixture, and drizzle the chipotle sauce over top. Garnish with cilantro leaves.
