Goat Cheese Scramble

Ingredients

  • 2 tsp Extra-virgin olive oil
  • 8 oz Breakfast sausage patty
  • 2 tbsp Butter
  • 8 Eggs beaten
  • 1/3 cup Goat cheese diced
  • 4 slices Sourdough bread toasted (or bread of your choice)
  • 4 tbsp Raspberry jam
  • 1 Apple sliced (Check the Fruit guide to substitute seasonal fruits)
  • 2 tbsp Scallions garnish

Instructions

  • Heat a non-stick pan over medium heat. Add the oil and cook the sausage patty on both sides to an internal temperature of 155 degrees using a thermometer. Then set aside.
  • To the same pan add in the butter, eggs, and cheese. Move the eggs using circular motions with a spatula or wooden spoon to fluff up and cook, (move the pan on and off the heat as needed to prevent the eggs from cooking too quickly and overcooking or drying out). Remove the pan from the heat while the eggs are still moist.  Season with salt and pepper to taste. 
  • Toast the bread. Spread the jam onto the bread.
  • Serve the eggs with toast, sausage patty, and apple. Garnish with scallions.
