Ginger Beef Stew

Ingredients

  • 1/4 cup Israeli couscous also know as pearl couscous
  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion diced
  • 2 cloves Garlic minced
  • 2 tsp Fresh ginger
  • 1/2 pound Ground beef
  • 1/2 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 2 cups Chicken broth
  • 1 cup Baby carrots
  • 1 Pita bread
  • 2 tbsp Greek yogurt
  • 1/4 cup Grape tomatoes quartered
  • 2 tbsp Fresh cilantro garnish

Instructions

  • Cook the couscous according to the instructions on the package. Drain well, drizzle with a small amount of olive oil and season with salt and pepper, then set aside covered with a lid to keep warm.
  • Heat a pot over medium heat. Once hot, add the oil. Saute the onion, garlic, and ginger until soft. Crumble in the ground beef and break it up into smaller pieces with a spatula. Once partially browned, add in the cumin and paprika. Brown the beef well. Season with salt and pepper.
  • Stir in chicken broth and carrots. Cover with a lid and low simmer for about 20 minutes to build flavor and until the carrots are tender. Taste and adjust the seasoning with salt and pepper or additional spices if needed.
  • In the meantime, heat a saute pan on medium heat. Warm the pita on both sides then cut into wedges.
  • Portion the stew and serve with couscous and pita. Top with yogurt and tomato. Garnish with cilantro.
