Garden Salad w/ Rice Wine Vinaigrette

Ingredients

  • 4 cups Romaine lettuce chopped
  • 1/2 Cucumber sliced
  • 12 Grape tomatoes halved
  • 1/2 Carrots peeled and shaved

Vinaigrette

  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Rice wine vinegar
  • 1 tsp Dijon mustard

Instructions

  • Lay down the lettuce and top with cucumber and tomato on top. Use a vegetable peeler to shave the carrot over the top of the salad.
  • Whisk together ingredients for the vinaigrette and dress the salad before serving.
