Garden Salad w/ Red Wine Vinaigrette

Ingredients

  • 2 cups Romaine lettuce chopped
  • 1/4 cup Cucumber sliced
  • 2 Tbsp Carrots peeled and shaved with a vegetable peeler

Vinaigrette

  • 2 tsp Extra-virgin olive oil
  • 1/2 tsp Rice wine vinegar
  • 1/4 tsp Dijon mustard
  • 1/8 tsp Fresh thyme leaves chopped

Instructions

  • Place the salad ingredients in a bowl.
  • Whisk together the ingredients for the vinaigrette and season to taste with salt and pepper. Dress the salad before serving.
