In a small pan or pot, heat the oil to 350°F over medium-high heat (you want about 1 inch of oil). Reduce heat to medium.
In a large liquid measuring cup or bowl with a spout, whisk together sugar, baking powder, salt, and flour until combined. Mix in the milk a little at a time until a batter forms. (The consistency should be like a pancake batter not super thick but not watery). Once you have the right consistency, mix in the vanilla.
Drizzle the batter from the cup in a thin line, swirling around the pan and overlapping as desired. Cook for 2-3 minutes or until light golden brown, then flip and cook another 2-3 minutes or until golden brown.
