Ingredients

Fruit and Cream Pastry

  • 3 oz Cream cheese softened
  • 1 TBSP Granulated sugar
  • 1 tsp Lemon juice
  • ½ tsp Lemon zest
  • ½ tsp Vanilla extract
  • pinch Salt
  • 1 cup Fresh fruit such as berries diced apple or sliced peaches prepared as needed
  • 1 sheet Puff pastry defrosted
  • 1 Egg for egg wash

  • Your choice of sweetener

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Prepare Cream Cheese Mixture: In a small bowl, combine softened cream cheese, sugar, lemon juice, lemon zest, salt, and vanilla extract. Stir well until the mixture is smooth and creamy.
  • Prepare the Fruit: Wash, dice, or slice the fruit as needed, depending on the type you choose.
  • Prepare Puff Pastry: Unfold the sheet of puff pastry on a clean surface. Using a round 4-inch cookie cutter or a similarly sized glass, cut the pastry into 4 equal circles.
  • Assemble Pastries: Place each circle of puff pastry on the parchment-lined baking sheet. Spoon about 2 tablespoons of the cream cheese mixture into the center of each circle. Spread the mixture slightly, leaving a small border around the edges.
  • Top each pastry with fresh fruit.
  • Egg Wash: In a small bowl, whisk the egg to create an egg wash. Brush the edges of each pastry circle with the egg wash for a golden, glossy finish.
  • Bake Pastries: Place the pastries in the preheated oven and bake for 20-25 minutes, or until the puff pastry is golden brown and fully puffed up.
  • Prepare the Coffee: While the pastries are baking, brew your favorite coffee using your preferred method. Once the pastries are done, remove them from the oven and let them cool slightly. Prepare the coffee to your liking.
  • Enjoy: Serve the warm pastries with freshly brewed coffee. Enjoy your delicious and cozy breakfast!
