Prep the ingredients per the instructions above.
Start by preheating the airfryer to 400°F (200°C). Peel the russet potatoes and cut them into thin, uniform strips. Soak in cold water for 20 minutes. Dry thoroughly.
Place the fries in the air fryer basket and drizzle with oil. Cook for about 20 minutes, shaking or flipping them halfway through, until the fries are crispy and golden. Season with salt and pepper to taste.
Prepare the Po' Boy Sandwich. Heat your oil to 375°F (200°C) in a deep skillet.
Cut the sub rolls in half lengthwise, creating a top and bottom portion.
In a shallow bowl, combine the flour, cornmeal, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
Dip the shrimp in the buttermilk, allowing any excess to drip off, then coat them in the flour mixture, pressing gently to adhere.
Place the coated shrimp in the oil and fry for 2-3 minutes each side, until they are golden brown and cooked through. You may need to cook them in batches.
Assemble the Po' Boy Sandwiches by spreading mayonnaise on the insides of the rolls. Layer lettuce, tomato, pickles, and crispy fried shrimp.
Optional: Drizzle some hot sauce over the shrimp for added heat.
