Season the rice with salt and pepper. Cook the rice according to the package directions. Once the rice is cooked, drain any excess water if needed. Set aside.
Heat the olive oil in a non-stick pan over medium heat. Add the carrots, celery, garlic, scallions, and ginger. Sauté until the carrot starts to soften. Add the cooked rice, rice vinegar and soy sauce. Stir well and sauté until the liquid soaks into the rice completely.
Taste and adjust any of the ingredients as needed before serving.
