Prepare all ingredients as listed above.
In a shallow bowl, whisk together eggs, milk, ground cinnamon, vanilla extract, and granulated sugar until well combined to make the dipping mixture.
Cut each slice of bread into sticks about ½ inch wide to create the French toast sticks.
Heat a non-stick skillet or griddle over medium heat. Add half the butter and let it melt to coat the pan.
Dip each breadstick into the egg mixture, coating fully, and let excess drip off.
Place coated breadsticks in the hot skillet. Cook for 2–3 minutes on each side until golden brown and crispy. Add more butter as needed for remaining sticks.
