For the chicken sausage: If raw, cook in a 400 degree oven to an internal temperature of 160 degrees using a thermometer. If already cooked: Preheat a non-stick pan over medium heat and brown the chicken sausage slices on each side.
Preheat a non-stick pan or griddle over medium low heat. Lightly grease the pan with butter as needed.
Mix the beaten egg, milk, half of the sugar, vanilla and half of the cinnamon in a shallow bowl. Dip the bread in egg mixture, turning to coat both sides evenly until the sticks are moistened but not soggy. Cook in the pan or griddle until golden brown on all sides.
Mix the remaining cinnamon and sugar in a shallow bowl. Once the french toast sticks are cooked roll each one in the cinnamon sugar.
Serve the French toast with syrup, chicken sausage, cottage cheese and mango.
