Prep all sandwich ingredients per instruction above.
Preheat a panini grill (or oven to 350°F (177°C)). (Depending on the thickness of the bread a panini grill may not work very well)
Spread the mayo onto one side of each half of bread, spread the pesto onto each half of the other slices. Layer with mozzarella drizzled with olive oil, basil, and tomato seasoned with salt and pepper.
Grill the panini: If using a panini grill, spray with nonstick cooking spray and press the sandwich down. Cook until the bread is crispy and the cheese is melted. If using the oven, place on a baking sheet and bake until hot, then use a saute pan to compress the sandwich.
Mix together the ranch and sriracha in a bowl.
Serve: Cut each panini in half and enjoy with carrot sticks and spicy ranch and kombucha (over ice if desired).
