Ingredients

  • 1 Apple peeled and diced
  • 2 tbsp Brown sugar
  • 2 tbsp Butter
  • 1 tsp Ground cinnamon
  • 1/2 tsp Vanilla extract
  • 2 tsp Extra-virgin olive oil
  • 8 Eggs
  • 2 Croissant halved
  • 4 oz Chicken sausage links sliced

Instructions

  • Add apples, sugar, and butter to a non-stick pan. Cook over low-medium heat, then stir in the cinnamon and vanilla. Allow it to reduce into a syrup consistency until the apples are tender but still somewhat firm.
  • Heat the oil in a pan over medium heat. Brown the sausage slices on both sides.
