Using a teaspoon depress the center portion of the bread down, being careful to avoid the crust edges so you create a well with the sunken area.
Butter the other side of the bread.
Heat a large non-stick pan over medium heat. Place the bread, butter side down, into the pan. Crack the eggs into the well of the bread, top with cheese and season with salt and pepper.
Place the pan under the broiler for 5-8 minutes until the whites of the eggs are firm and the cheese is lightly toasted (cook longer for less runny yolk if desired). Place the chicken sausage in the pan to brown at the same time or do it on the stovetop.
Garnish with chives. Serve with apple and chicken sausage.
