Eggs, Hash Browns

Ingredients

Hash Browns

  • 2 TBSP Extra-virgin olive oil
  • 2 cups Potatoes peeled and shredded with a box grater
  • 1/2 tsp Salt
  • 1/2 tsp Paprika
  • Black pepper to taste

Bacon

  • 4 slices Bacon

Eggs

  • 2 tsp Butter
  • 4 Eggs

Avocado

  • 1 Avocado sliced
  • 1 tsp Lime juice

Orange Juice

  • 16 oz Orange juice

Instructions

  • Cook the Hash Browns: Add the oil to a heavy-bottomed skillet over medium heat. Saute the potato, salt, and paprika until the potatoes are golden brown and crispy. Adjust the heat as needed. Season with salt and pepper to taste.
  • Cook the Bacon: Heat a skillet over medium heat. Cook the bacon until crispy on each side. Remove and drain on a paper towel.
  • Heat a nonstick pan on medium heat; melt the butter in the pan and crack the eggs in, being careful not to break the yolks. Cook until the whites of the eggs firm up and set. Season with salt and pepper.
  • Serve the eggs with bacon, hash browns, avocado slices drizzled with lime, and orange juice.
