Preheat the oven to 400F / 160C.
Cook hash browns: In a heavy-bottomed skillet, heat olive oil over medium heat. Add shredded potatoes, salt, and paprika. Spread into an even layer. Cook for 4–5 minutes without stirring, then flip and cook another 4–5 minutes until golden brown and crispy. Season with black pepper to taste.
Cook the sausage on a baking sheet in the oven to an internal temperature of 160F / 71C.
Cook eggs: In a clean nonstick skillet, melt butter over medium heat. Crack in eggs and cook to desired doneness (sunny-side up, over-easy, or fully cooked). Season lightly with salt and black pepper.
Brew and prepare the coffee to your liking.
Prepare avocado: Slice the avocado, drizzle with lime juice, and season with salt and black pepper.
Serve the eggs, sausage, hash browns, and avocado slices, fresh fruit, orange juice and coffee. Enjoy!
