Add the potatoes to a pot of water and bring to a boil. Cook until tender about 10 - 15 minutes. Then drain. Mash the potatoes along with the garlic, butter, cream and parsley. Season with salt and pepper to taste. Allow the mixture to cool down enough to handle.
Heat the oil in a nonstick pan over medium heat. Form the potato mixture into flat patties and fry in the oil on both sides until nicely browned then set aside.
Cook the Sausage: In a large pan, heat a small amount of oil over medium heat. Add the sausage links and cook for about 5-7 minutes, turning occasionally, until golden brown and cooked through. Remove from the pan and set aside.
Cook the Eggs: In a separate non-stick skillet, melt butter over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny side up, scrambled, or over easy). This should take about 3-5 minutes.
Serve the eggs with fried potato pancakes, sausage links, pineapple slices, and orange juice. Enjoy!
