Egg Muffins

Ingredients

  • Nonstick spray
  • 2 tsp Extra-virgin olive oil
  • Green bell pepper
  • Red onion
  • 4 oz Deli ham chopped
  • 8 Eggs beaten
  • 4 oz Monterey jack cheese shredded
  • 4 slices Sourdough bread toasted
  • 2 tbsp Scallions chopped
  • 1 Grapefruit peeled and sectioned (Check the Fruit guide to substitute seasonal fruits)
  • 1 cup Cottage Cheese
  • Hot sauce optional

Instructions

  • Preheat the oven broiler on medium heat.
  • Grease a muffin tin with nonstick spray
  • Heat an oven safe non-stick pan over medium heat. Once hot, add in the oil, peppers, and onions. Sauté until the vegetables start to soften then add in the ham and saute until browned. Remove from the heat.
  • Whisk the eggs and cheese in a bowl and stir in ham, peppers, and onions. Season with salt and pepper. Evenly distribute the mixture into the muffin tin.
  • Place underneath the broiler and cook until the egg is firm, about 5 to 8 minutes. Toast the bread.
  • Portion the eggs and garnish with scallions. Serve with grapefruit and cottage cheese. Drizzle with hot sauce if desired.
