Dijon Potato Salad

Ingredients

  • 2 cups Potatoes peeled and cut into small bite siced chunks
  • 1/4 cup Celery minced
  • 2 tbsp Red onion minced
  • 1 clove Garlic minced
  • 1/4 cup Carrots shredded
  • 2 tsp Dijon mustard
  • 3 tbsp Mayonnaise
  • 2 tbsp Fresh parsley chopped

Instructions

  • Bring a pot of salted water to a boil over high heat, add the potatoes then reduce heat to a simmer and cook until a fork easily slides in and out with little resistance, about 5 to 7 minutes.
  • Drain well and transfer the potatoes to a shallow bowl or tray. Place in the refrigerator to cool completely. Once cooled, Mix all of the ingredients together in a bowl. Season with salt and pepper to taste. Adjust any of the ingredients as needed to taste before serving.
