Bring a pot of salted water to a boil over high heat, add the potatoes then reduce heat to a simmer and cook until a fork easily slides in and out with little resistance, about 5 to 7 minutes.
Drain well and transfer the potatoes to a shallow bowl or tray. Place in the refrigerator to cool completely. Once cooled, Mix all of the ingredients together in a bowl. Season with salt and pepper to taste. Adjust any of the ingredients as needed to taste before serving.
